Austrian Kaeferbohnen

Phaseolus coccineus

 Kaeferbohnen translated means "Beetle Bean" which is quite apt as the large dried beans do indeed look like beetles.

This is an old German variety, traditionally used to make a dish called "Bohnen Salat". The freshly harvested beans are purple-pink, but change to cream, tan and brown when dried. Cooking renders these beans creamy with a unique chestnut flavor that really stands out.
