Also known as fris?e, this French heirloom endive has deeply cut, dark green leaves and a mild, slightly bitter flavor that works well in salads. It handles cold weather well, and a light frost will actually make it taste sweeter. In warmer conditions, the bitterness becomes more pronounced.
Endive is also packed with nutrients rich in vitamins A, C, and K, plus folate, fiber, inulin, and several B vitamins.
