This is the larger version of the Tomaquet De Penjar Bombeta and is also from the region of Balaguer.
In Catalunya, day old bread is sliced, rubbed with a clove of garlic and a halved tomato, this called Pa amb Tomaquet. Obviously, hanging the tomatoes for months concentrates the flavor as they lose what little moisture they have.
