Onions have been around for over 5,000 years, cherished by the Egyptians and celebrated in India for their medicinal properties. Developed by the Desert Seed Company in El Centro, California, and released in 1962, the Red Creole has since become a popular choice.
This onion has a more pungent, spicy flavor compared to sweeter varieties, making it ideal for cooking. Use it raw in salads and salsas for a crisp, colorful kick, or add it to grilling, frying, roasting, pickling, chutneys, and sautés. The greens are great cooked with green pumpkin for extra flavor. Onions are also a natural antibiotic and offer health benefits like liver cleansing and cholesterol lowering. They’re packed with vitamins and minerals, and you can even dry them for later use.
Plant in full sun as these onions need long days—at least 10-12 hours—to grow properly. Ensure your soil is well-drained, rich in organic matter, and not too acidic. Water regularly but avoid overwatering, and keep in mind that high soil sulfur levels can increase pungency. Harvest onions when they reach the desired size, or for storage, pull them when the tops dry and flop over. Cure them in a well-ventilated shed or greenhouse for 2-4 weeks. Expect about 250-220 days to maturity.
